Most Cambodians call this appetizer Nhem Chow, but that sounds Chinese and I don't like to confuse my guests. When my mom made these special spring rolls, I always begged to help. I was just a little girl of 7 or 8, and she woudn't allow me to roll even one! That made me very angry. Now, I have my wish. I take pride in preparing and serving between 150 and 200 nhem shross each week.
